If you’re a weirdo like me and like to take photos of the food you cook and eat, try moving to a totally different spot sometime! So if the photos look a little different, furniture rearranging is the reason. Let’s just move on to the pasta, and I would like to point out that for the purposes of this post and the rest of the cooking posts I’ll post this week, when I cooked on Saturday I decided to-brace yourself- move my dining table to another window in order to avail myself of some different light than I’m used to using. I can sure talk something to death, can’t I? It was a mother-daughter pasta moment, is what I’m saying. She and I took turns filling our little bowls and wolfing down helpings of the spinach-and-tomato packed pasta deliciousness, our contentment level increasing with each cylinder of penne. It also absolutely completed my fourteen-year-old daughter, whose love of pasta is surpassed only by that of her mother, otherwise known as me. Stir in cooked penne pasta and heat through. Add sliced chicken sausage to heat through until internal temperature reaches 165 degrees. Add cherry tomatoes and stir occasionally smashing them with the back of a wooden spoon to release the juices. I've found that Hunts and the Aldi brand have flavor that is the closest to my grandma's version of this comfort dish.I made this for a late lunch Saturday, and it absolutely completed me. Heat olive oil in a large, deep skillet and add minced garlic. Make sure you select stewed tomatoes with celery - not all brands are created equal. This recipe feeds a crowd! Using canned tomato sauce and stewed tomatoes make this a quick dish to put together. My grandma's macaroni and tomatoes dish was the perfect addition to the eclectic meal! Season with salt, pepper, and pinch of sugar. Add the cooked macaroni to the tomato mixture. While the pasta drains, return the pot to the stove (over medium heat) add bacon grease and melt then and canned diced tomatoes. Zucchini relish and potato salad also graced our dinner table. Cook the macaroni pasta according to box directions drain well. She also brought a pineapple and cheese dish that is unique to our area. Crockpot BBQ ribs were a stand-in for another's memories of BBQ raccoon - remember, I'm in the rural Midwest, raccoon and other critters are commonplace! Another member brought "pink fluff" - strawberry jello and whipped cream. We had a pork roast that was a go-to dish for one member's mother. Our members range in age from 40-almost 80! Add in the tomato paste, tomato sauce, cream, and Italian seasoning. Add the garlic to the skillet and cook for 30 seconds. Let the pan heat up for a few minutes, then cook the chicken for about 5 minutes/side or until it's cooked through, then transfer the chicken to a plate. Chicken Tomato Macaroni Recipe- Pasta with Indian Masalas. We decided to theme the dinner meeting "From Grandma's Kitchen" and asked each member to bring a dish that was a family recipe or something they remember fondly from childhood. Add the butter and olive oil to a skillet over medium-high heat. The women's club that I belong to meets once a month and a friend and I were in charge this month. I was a lucky little girl - I got to eat food my grandma cooked every day! But I also remember my grandma making it when she cooked in the cafeteria at my grade school - oh so many years ago. My daddy love it, too, so we had it home often. My grandpa loved it, so my grandma cooked a lot of it. To the same skillet, turn heat to medium and add another teaspoon of olive oil, tomatoes, garlic, and chicken broth, to the skillet. Add chicken and cook, flipping once, until cooked through, about 5-6 minutes on each side. Macaroni with stewed tomatoes brings back fond childhood memories. Heat olive oil in a large skillet over medium high heat.
